(Citrus x limon)
Produced in Palermo from late April to early May.
Color: colorless when still liquid, pearly white when crystallizing.
Crystallization: medium crystals, crystallizes not quickly assuming a pasty consistency.
Smell: delicate and fruity, reminiscent of the same flowers.
Taste: honey with a delicate taste, intoxicating and very fruity.
Uses: together with orange, mandarin and citrus honey they are indicated for sweetening herbal teas as they are honey with a delicate taste. Unique if combined with cheeses, especially aged cheeses.
