Palmento Bianco is a blend of native grapes, grown organically on the north side of Etna, in Sicily. The grapes were hand-picked from various vineyards during the month of September. Half of Grecanico together with Grecanico Dorato has been macerated on the skins for a week.
The rest of the field grapes (Catarratto, Minnella Bianca, Carricante, Inzolia), in whole clusters, were immediately pressed into stainless steel. Alcoholic fermentation was spontaneous and without temperature control during which the two fermenting musts were mixed. The finished wine underwent malolactic fermentation and remained on the fine lees for 5 months before being bottled without refining or filtration. The minimum additions of S02 were made before bottling.
Light straw colored, this wine has beautiful floral notes, white flowers combined with lemons. It is fresh and delicate on the palate with a perceptive sensation that is in harmony with the sapidity and salinity of the wine. "Vino di Anna" is a small family business located on the north face of Etna, in Sicily. Eric Narioo and Anna Martens have been producing natural wines on Mt Etna for 10 years. They cultivate small plots of old sapling vines (from 60 to 100 years old) biodynamically and organically. The altitude of the vineyards varies from 760 m to 1,200 meters. The unique brightness of these mountain vineyards and the variable and decomposed lava soils give the wines a distinct minerality and flavor. The wines are made with minimal intervention, indigenous yeasts, without additives, without refinement or filtration and little or no SO2
