The Sicilian Violet Eggplant, a summer fruit rich in vitamins and minerals. It counteracts fatigue due to heat and is indicated in low-calorie diets. The aubergine, originally from India, was introduced into Sicily by the Arabs around 1400; and it is still here that the most intense cultivation of this vegetable takes place in Italy, with 30% of the national production. Wealth in tannins is useful for stimulating the production of bile by lowering cholesterol.
