The white onion of Giarratana is a typical Sicilian onion variety characterized by its sweet, non-pungent taste and with considerable dimensions, it can weigh up to three hundred grams. They are bulbs with a flattened shape and the tunic is brownish-white in color. It is cultivated in the territory of the municipality of Giarratana (RG), in the Iblei. In the area of Castrofilippo, in the province of Agrigento, a variety of Paglina onions is cultivated and it was already mentioned in the Bourbon Cadastre. Today the delicious local bulbs have been recovered and restored to their former glory and can be enjoyed in many recipes both cooked and raw thanks to their delicate flavor.
