Grani Antichi pastes, produced with ancient Sicilian varieties (Margherito, Perciasacchi, Russello, Timilia and Maiorca), recovered thanks to the work of the "custodians of the seeds", farmers engaged in their preservation. The supply chain is, in fact, controlled in all its phases: from cultivation to production of the product. The cultivation takes place in the fertile lands of the south east of Sicily on farms that preserve the biodiversity of the territory, while the storage takes place in the characteristics "Fosse dei Grani", dry and ventilated places able to preserve the quality of the raw material: an ancient conservation methods in use among the Egyptians. The precious grains are then passed to the mill with the monolithic stone mill, equipped with advanced technology.
