 Baked onion salad

In Sicily the baked onions can be bought already cooked in all the markets and the bakeries to very few cents. It is a show to see large pans full of onions already cooked and ready to prepare. Normally they are in good company with peppers, also ready to peel and season with oil and mint for a fresh side dish.


4 large white and flat onions extra virgin olive oil red wine vinegar dried oregano salt pepper.
1 Coat a plate with baking paper and place the onions on top without removing the outer leaves.
Bake at 220 degrees for a time ranging from 45 minutes to 2 hours depending on the size and quality of the onion and clearly based on the power of your oven.
3 Onions will be cooked when the outer leaves will be dark and scorched and will be soft to the touch.
4 Allow to cool, then peel and remove the burnt layers. Reduce the pulp into pieces that are not too small and season with salt and pepper, extra virgin olive oil, vinegar and oregano. Enjoy cold
