Macco fried

The fried macco is one of those Sicilian recipes of purely peasant origin. The constant search for products that could feed and at the same time whet your appetite has given rise to poor recipes, because they are not very expensive, but rich in taste.


600 gr. of dried fava beans Extra virgin olive oil salt pepper


1 Soak the beans for a night to make them softer; drain them and transfer them to a pan.

2 Cover with cold water and let it cook for a couple of hours, stirring often with a wooden spoon, so that the legumes become mash, a puree.

3 Before turning off the heat, season the preparation with salt and pepper and pour it into a slightly dampened pan.

4 Level the surface and let it cool completely. When the macco has become hard, turn it over on a tray and cut it into slices; then fry it in hot oil and serve immediately.
