Rinse the prawns carefully. Soak them for 30 min. about in cold, salted water with coarse salt. Bring a pot of water to the boil. Add salt and pour vinegar. Put the prawns in it. Boil a few minutes. Move them in a bowl. Let it cool. Deprive them of the shell and clean them. Peel the celery. Soak it with the juice of 1/2 lemon for 30 min. Place the prawns in a bowl. Season them with oil. Season with salt and pepper. Drain the celery from the lemon. Chop. Add it to the prawns. Pour the remaining lemon juice. Look good. Cover the basin. Transfer it for 30 min. in the fridge. Sprinkle chopped parsley without serving. Lay us whole mint leaves. Serve.
